Upside-Down Rhubarb Cake

Despite everything working against me this recipe was delicious. It was taken from the Yahoo Dutch Oven mailing list. No pictures but it wasn't a pretty cake at all.

3 C. fresh rhubarb, cut into 1/2-inch slices
1 C. sugar
2 tsp. all-purpose flour
1/4 tsp. ground nutmeg
1/4 C. butter or margarine, melted
Batter:
1-1/2 C. all-purpose flour
3/4 C. sugar
2 tsp. baking powder
1/4 tsp. salt
1/2 tsp. ground nutmeg
1/4 C. butter or margarine, melted
2/3 C. milk
1 egg
sweetened whip cream, optional

Baked Beans

1 lb kielbasa sliced
1 lb ground beef
1medium chopped onion
1/2 lb bacon cooked & crumbled
3 or 4 big cans pork beans
1-1/2 cup ketchup
1/2 cup packed brown sugar
1/2 cup molasses
1 tbsp Worsestershire sauce
2 tbsp prepared yellow mustard
cook hamburger and onion, drain.
Mix in other stuff.
Put in slow cooker for several hours to simmer or Bake 30 min @350. Stir to prevent burning bottom.

Giant Cookie pt. 2: Hard Mode

The last cookie was a success. However, it was kind of a pain to get the warm cookie out of the bottom of the oven. While catching up on the dutch oven mailing list I happened to see a thread that mentioned that you can cook in the lid with the entire oven upside down for pies and other baked goods. I call it dutch oven hard mode.

Giant cookie

A giant cookie takes the entire batch of cookie dough and puts it into the bottom of the dutch oven. My recipe was the cookie recipe off the back of the Toll House bag. The result was delicious and more food than expected! I have a picture of the finished recipe that I can put up later.

Roast

This was two or three weeks ago. I finally took a stab at cooking a roast. This was mostly a failure: after an hour of cooking (estimated time was an hour to an hour and a half) I was not even halfway to rare. I pulled the charcoal off and dumped it into the oven for a done but not pink roast.

Yet another recipe from the excellent Dutch Oven Madness. I prepared and executed this recipe according to spec. It cooked for about 25 minutes with a rotation at about 15 minutes.

Fried Apple Pies

This was a miserable failure. I took a recipe from here and decided to do it in a dutch oven. I went with 20 charcoals underneath the dutch oven. While this provided enough heat to brown up the pies cooking took far too long. Pies also fell apart because of a combination of the slow cooking speed and being prodded by the tongs. I didn't bother to take pictures because the end result was pretty messy.
